Laissez les bons temps rouler

With the Saints in the Super Bowl and Mardi Gras two weeks away, I’m getting in the mood for something New Orleans. Granted, I’ve never been there, but I’ve watched enough Emeril and listened to enough Lil Wayne to at least get a feel for the place … or so I think …

But I do know that beignets are classic New Orleans. They remind me of Italian zeppole, in that they’re both small, light, deep-fried balls of dough — always a recipe for success in my book! But while Italians normally eat zeppole for dessert, beignets are the breakfast of New Orleans champs.

Imagine my excitement when I found this recipe on MSN’s food site Delish (courtesy of Good Housekeeping mag). The beignets are baked instead of deep-fried, so they’re easier to make and better for you, and the espresso-chocolate dipping sauce sounds divine. Delicious for sure!
